Spicy Shrimp and Asparagus Stir Fry

Makes 4 Servings

One pot healthy stir fry that’s quick, easy, and nutritious! 

1 lb. bag of large peeled, deveined shrimp. 

1(240g) bag of Uncle Ben’s Original Brown Rice (2 cups cooked) 

1 bunch of asparagus chopped

Cumin

Chili Powder

Cayenne Powder

Olive Oil

½ Lemon (use the juice)

COOKING INSTRUCTIONS

Defrost 1 lb bag of Shrimp. 

Spray a frying pan with Pam and heat to medium or medium high. 

Microwave 1 bag of brown rice. 

Wash and chop asparagus. 

Add olive oil. 

Add shrimp tossing in olive oil until coated. 

Add ½ tsp cumin 

Add ¾ tsp chili powder. 

Add ¼ tsp cayenne pepper or more to taste. 

Add asparagus 

Add the juice from ½ lemon

Stir in the cooked rice and cover to steam asparagus  

Cooking time is about 10 minutes. Don’t over cook, keep your asparagus a little crunchy.
